Tavada Kazandibi

A Turkish dessert made from a creamy milk pudding cooked over caramelized sugar.


Ingredients

  • 2 1/2 cups milk

  • 1/4 cup sugar

  • 2 tbsp flour

  • 1 tbsp cornstarch

  • 1 egg yolk

  • vanilla

  • 2 tbsp powdered sugar


Method

  • In a saucepan, whisk the milk, sugar, flour, cornstarch, egg yolk, and vanilla.

  • Cook over low heat, whisking constantly, until thickened. Set aside.

  • In a pan over medium heat, add the powdered sugar and allow to caramelize.

  • Pour some of the prepared pudding on the caramelized sugar and mix until just combined.

  • Pour the rest of the pudding and cook for 2-3 minutes, without mixing it.

  • Allow to cool slightly before refrigerating for at least 2 hours.

  • To serve, slice the kazandibi into rectangles and roll with the help of a spatula.
