Tavada Kazandibi
A Turkish dessert made from a creamy milk pudding cooked over caramelized sugar.
Ingredients
2 1/2 cups milk
1/4 cup sugar
2 tbsp flour
1 tbsp cornstarch
1 egg yolk
vanilla
2 tbsp powdered sugar
Method
In a saucepan, whisk the milk, sugar, flour, cornstarch, egg yolk, and vanilla.
Cook over low heat, whisking constantly, until thickened. Set aside.
In a pan over medium heat, add the powdered sugar and allow to caramelize.
Pour some of the prepared pudding on the caramelized sugar and mix until just combined.
Pour the rest of the pudding and cook for 2-3 minutes, without mixing it.
Allow to cool slightly before refrigerating for at least 2 hours.
To serve, slice the kazandibi into rectangles and roll with the help of a spatula.
