Oatmeal Cookies
A chewy and moist surprising bite.
Ingredients
100 g butter
1/3 cup brown sugar
1/3 cup white sugar
vanilla
1 egg
1 cup flour
1 tsp baking soda
pinch of salt
1 cup rolled oats
1/2 cup almond flour
1/2 cup chopped walnuts
160 g milk chocolate, chopped
Method
In a In a stand mixer, combine the butter, sugars, and vanilla.
Add the vanilla, egg, flour, baking soda, salt, oats, and almond flour.
Fold in the walnuts and chocolate.
Using an icecream scoop, scoop the dough onto a baking sheet lined with baking paper making sure to evenly space them out. Lightly flatten the balls of dough.
Chill the dough for 1-2 hours.
Bake in the oven preheated at 180°C/350°F for 12-14 minutes.
Allow to cool completely.
