Oatmeal Cookies

A chewy and moist surprising bite.


Ingredients

  • 100 g butter

  • 1/3 cup brown sugar

  • 1/3 cup white sugar

  • vanilla

  • 1 egg

  • 1 cup flour

  • 1 tsp baking soda

  • pinch of salt

  • 1 cup rolled oats

  • 1/2 cup almond flour

  • 1/2 cup chopped walnuts

  • 160 g milk chocolate, chopped


Method

  • In a In a stand mixer, combine the butter, sugars, and vanilla.

  • Add the vanilla, egg, flour, baking soda, salt, oats, and almond flour.

  • Fold in the walnuts and chocolate.

  • Using an icecream scoop, scoop the dough onto a baking sheet lined with baking paper making sure to evenly space them out. Lightly flatten the balls of dough.

  • Chill the dough for 1-2 hours.

  • Bake in the oven preheated at 180°C/350°F for 12-14 minutes.

  • Allow to cool completely.
