Date Cheesecake
Ingredients
Crust
300 g ground digestives
90 g butter, melted
1/2 tsp cinnamon
1/2 cup pitted dates
Cheesecake
500 g cream cheese
1/3 cup brown sugar
2 eggs
vanilla
200 g sour cream
Method
Preheat oven to 180°C. Line a 9” square pan with baking paper.
In a food processor, add the digestives, butter, and cinnamon. Press into the pan. Chill.
Lay the dates on the crust.
In a food processor, combine all the filling ingerdients.
Don't over mix. Pour the mixture on the crust.
Bake in a ban-marie for 40 to 50 minutes.
Allow to cool completely before refrigerating for at least 3 hours.
