Date Cheesecake


Ingredients

Crust

  • 300 g ground digestives

  • 90 g butter, melted

  • 1/2 tsp cinnamon

  • 1/2 cup pitted dates

Cheesecake

  • 500 g cream cheese

  • 1/3 cup brown sugar

  • 2 eggs

  • vanilla

  • 200 g sour cream


Method 

  • Preheat oven to 180°C. Line a 9” square pan with baking paper.

  • In a food processor, add the digestives, butter, and cinnamon. Press into the pan. Chill.

  • Lay the dates on the crust.

  • In a food processor, combine all the filling ingerdients.

  • Don't over mix. Pour the mixture on the crust.

  • Bake in a ban-marie for 40 to 50 minutes.

  • Allow to cool completely before refrigerating for at least 3 hours.
