Carrot Cake
An incredibly moist cake with a drizzle of cream cheese sauce.
Ingredients
Carrot Cake
1 cup sugar
2 eggs
1 cup oil
vanilla
1 1/3 cup flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
200g grated carrot
1/3 cup chopped walnuts
Cream Cheese Sauce
150 g powdered sugar
125 g cream cheese
25 g butter
vanilla
Method
Carrot Cake
Whisk the sugar, eggs, vanilla, and oil until thick.
Add in the flour, baking powder, and cinnamon.
Mix in the grated carrots and walnuts.
Grease a bundt pan. Pour the mixture into the pan.
Bake in a preheated oven at 170°C for 40-45 min. Allow to cool.
Cream Cheese Sauce
In a bowl, beat the cream cheese and butter until smooth.
Slowly add in the powdered sugar and vanilla until it is smooth and creamy. Chill.
Decorate as desired.
