Apple Cider Cake

A moist and spiced cake infused with apple cider, topped with a cinnamon-sugar coating.


Ingredients

  • 1 cup apple cider

  • 1/2 cup applesauce

  • 1 cup oil 

  • 3 eggs

  • vanilla

  • 3 cups flour

  • 1/2 cup brown sugar

  • 1/2 cup sugar

  • 1 tsp ground cinnamon

  • 2 tsp baking powder

  • pinch of salt

Coating

  • 30 g melted butter

  • 1/3 cup sugar

  • 1/4 tsp cinnamon


Method

  • Preheat the oven to 180°C/350°F. Grease a bundt pan.

  • In a bowl, whisk the apple cider, applesauce, oil, eggs, and vanilla.

  • In another bowl, sift the flour. Add in the brown sugar, sugar, cinnamon, baking powder, and salt.

  • Pour in the wet ingredients and whisk until combined.

  • Pour the cake batter into the pan.

  • Bake for 35-40 minutes, or until a skewer inserted comes out clean.

  • Allow the cake to cool in the pan for 10-15 minutes.

  • Flip the cake and brush with melted butter until fully coated.

  • Mix the sugar and cinnamon and sprinkle the coating on the cake.
